Late season Pak Choi thrives in the cooler temperatures of autumn as long as you know when to plant it so that you can get your crop before colder temperatures arrive. It matures in 60 days, so for a fall harvest, you can sow seeds on your windowsill in August up to early September to transplant out in your bed in 28 days, in September or October if you provide the plants with protection such as a cold frame. It will be ready to harvest in October-November. Mulch fall crops heavily and keep them consistently moist.
